In the year 2006, the WRA (Water Reclamation Authority) in Des Moines instituted a program thought by many to be quite aggressive. It was aimed at reducing the total amount of grease, oils, and fats finding their way into the main sewer systems. Much of these fats and oils came from establishments operating in the foodservice industry. By being able to do away with the FOG (fats, oil, and grease) present in the sewer systems, WRA was striving to prevent blockage of the sanitary systems and reduce overflows that could place the environment at risk.
